Excuse my ignorance, (especially as I have been going to the footy since I was five. and that is a very looooong time ago) but what happens if any of the rounds this week or in the finals (granny excluded) end in a draw?

It's 5 minutes each way plus time on if there is a draw in regulation time. The game you recall Scott was way back in 1990, which was a replay in the qualifying final and pushed the whole finals series back - meaning Collingwood still hasn't won a grand final in September since 1953.
